      Last night my best friend & I got together to have a mom's night out. After hours of text messaging each other about what to go out and do we finally came to a decision. We were going to go and see the new movie Hansel & Gretel.

Let it be known that I am a complete & total wimp when it comes to scary movies so I was a bit anxious about seeing this thinking it was going to be scary. In my opinion it wasn't at all and had more of The Brother's Grimm & Red Riding Hood feel to it. There was quite a bit of blood & guts that I turned my eyes from but otherwise it's not scary at all. We really enjoyed it (especially Jeremy Renner aka Hansel) but I felt like something was missing that left me feeling a bit unfulfilled when we left. Definitely not a movie for some younger viewers with all of the blood and violence. Lots of CGI but it was done very smoothly and of course this story is not at all like the book except for the first five minutes or so. I definitely recommend this movie to everyone to see at least once & the DVD will be added to my movie collection when it comes out.

     It's been raining here since yesterday so where we saw the movie looked absolutely beautiful. Here are a few pictures that I'd like to share with you that I took.

Last night I decided to try out the recipe that I had been mentally working on for a few weeks beforehand. Country Style Chicken & Biscuits is what I decided to call it because it is made from layers of - mashed potatoes, country gravy with chicken and biscuits on top. I was so pleased that it was edible and apparently really good because my family even enjoyed it, seconds and leftovers today.

Ingredients for a 13x9 pan:

3-4 chicken breasts (bite-sized)
6 servings of mashed potatoes
     1 3/4 cups water
     1/4 tsp salt divided
     3 tbs unsalted
     1 cups milk 
     2 cups mashed potato flakes
Country Gravy
     1/2 cup vegetable oil
     3/4 cup all-purpose flour
     1 tsp salt
     1 tsp ground black pepper
2 1/4 cup Bisquick mix
     2/3 cup milk


Preheat oven to 350 degrees. 
In a non-stick skillet add your chicken to cook. Then in a large skillet begin the gravy by heating the oil and whisking in the flour, salt and pepper until smooth. Slowly, whisk in the milk so no clumps form and continue to cook until gravy thickens. If the gravy is too thick for your liking than you can add more milk until it is to the consistency in which you enjoy. Once the chicken is completely cooked add it to the gravy including the juices to add a bit more flavor. 

Now, make your mashed potatoes by heating all ingredients but the potato flakes in a microwave safe bowl for 4 1/2 minutes. Then add in potato flakes and fluff with a fork and than spoon the mashed potatoes into the bottom of the 13x9 pan spreading it out across the bottom. Now you can pour in the country gravy and chicken mix making sure that it to is level across the potatoes. In another bowl add the Bisquick and milk and mix until a stiff dough forms. Using two spoons add dollops of biscuit mix to the top of the gravy mixture. Bake in the oven for 10-15 minutes or until the biscuits are done to your liking. Serve and enjoy!

I was really impressed with myself on how well this came out and that everyone even ate some the next day. It is definitely going to become one of those dishes that is a constant in the nightly dinner rotation menu.
