Nut Free Chocolate Sunflower Balls

First off let me just start this post off by saying - Caution: these are highly addicting. Every time I make these I eat far too many of them because they are just that good. If you didn't already know, my son is deathly allergic to all nuts so he can't even enjoy the tastiness that is peanut butter cups or anything like them. So, I went on the hunt for something like them that he could have and we came across these chocolate sunflower butter cups from Sun Cups that I found at Wholefoods . They are tasty but a bit pricey and you only get 2 in a package so I decided to try making something like them at a cost that my wallet could handle.

This recipe is super easy to make and even better that it only takes a few ingredients.

  • ½ cup of sunflower seed butter
  • 2 tbls of softened butter
  • 1 cup of powdered sugar
  • ½ tsp of vanilla extract
  • 1 bag of nut free semi-sweet chocolate chips
  • Sprinkles (optional)
Makes about 10 (depending on size)

In a medium sized bowl mix together the sunflower seed butter, softened butter and vanilla extract. Once combined, slowly mix in powdered sugar until fully combined. It will turn into a crumble like texture and no longer be smooth. Begin rolling into little balls about ½inch or an inch depending on how big you want them and place onto a cookie sheet lined with wax paper. Once done, place into the refrigerator for about 15 minutes to harden up.

During this time you can begin melting the chocolate either in a double bowler or in a microwave safe bowl. Be careful not to microwave for too long or the chocolate will burn. Once your chocolate is melted and the butter balls have hardened you can begin the dipping and decorating process.

I used a toothpick for each ball because A) toothpicks were a lot easier than a fork and B) using one toothpick for multiple didn't work so well because too much chocolate would accumulate onto it making id far more difficult than necessary. Just stick the toothpick into the ball about halfway and then place into the bowl of chocolate. I used a spoon to fully cover the ball and then did a tapping shaking motion to remove the excess chocolate and placed it back onto the wax paper.

Before the chocolate hardens my son will go in with his choice of sprinkles even Christmas and Halloween ones, and decorate them. What's cool is you could use anything as a sprinkle like crushed up cookies. Once you're done with all of them, just place the cookie sheet back into the refrigerator until the chocolate has hardened and then, enjoy.
